Just tried the winter coffee - super tasty. Takes away the bitterness of the coffee without the need for sugar. Will be having this regularly!

Will be trying the pancakes/omelette next.

OK, that coffee sounds so good. I don't think I can wait til morning. I don't have coconut milk, but I think I'll see how it goes with almond milk. Mmm. Pumpkin pie.

This is brilliant, most useful post I have come across in a while, even if it is summer where I am! I don't think I'll let that stop me trying these though! My fave breaky up till now has been a super-food smoothie:

1/2 cup home-made nut milk
1/2 cup coconut milk
2 tablespoons raw cacao (love my chocolate!)
1/2 an organic banana
1 teaspoon raw honey
Plenty of ice
(optional)
2 teaspoons bee pollen
2 teaspoons maca
1/2 teaspoon camu camu
3 tablespoons organic yogurt if you'd like it to be thicker

Yum! Super smoothie; super energy.

@ Kat: That smoothie looks great, packed full of goodness! Glad you enjoyed the post and let me know how you like the recipes once you get around to trying some!

The darkness from the bananas above is from the 2t of cinnamon I added to the coconut oil and fried in. I'm a cinnamon lover!

Next time I will fry the banana in coconut oil, then add the spices after its done. The cinnamon didn't seem to have any bite/flavor after being cooked?

@ SOG: I too add loads of cinnamon but not that much so it doesn't go quite as brown/black. I am sure it tasted god and see no harm in adding that much just benefits like improved insulin sensitivity and a cleaner gut!

Great suggestions...
Just wondering if I can sub in almond milk instead of coconut for the winter coffee?

Those pancakes look kick ass as well!
